Market Forge ALTAIR II-6 Description
The Market Forge ALTAIR II-6 electric steamer operates in three main modes: soft poach, traditional steam, and high heat steam. To customize the temperature, it can be adjusted as high as 230 degrees Fahrenheit. It holds 12-inch-by-20-inch pans, and, depending on the pan depth, it can hold as many as 12 pans. A convection fan in the cavity moves steam throughout the cabinet to increase its velocity and ensure even and efficient distribution. For strength through high-volume use, the cavity is made of cast aluminum that is finished with an anodized coating to create a non-stick surface.
Water is preheated in the Market Forge ALTAIR II-6 electric steamer to provide quick recovery times, while water is filled automatically as needed to prevent it from drying out. Food is kept out of the reservoir by the clean water system, and the heating elements are located on the exterior of the reservoir to increase safety. Water dripping under the door is caught in the condensate trough and sent to the rear drain.
